Savoring a Cubs Win. Eating an Omelette.

Reminiscing about the Cubs victory last night, while sitting on my balcony this morning with the sun shining its vibrant rays upon me, eating an omelette. Taylor alternates between staring at me and playing with his Kong. He’s got his own treat inside it; and he’s frustrated he cannot easily get to it, which makes me extremely happy.

Taylor and I had already gone for a nice long walk, not a hike this time; that would be later this evening.

I’ve been on this healthy eating kick of late, adding as much cooler to my diet as possible. For the most part, not succumbing to processed foods, save for a sweet tooth that sometimes betrays me (and a burger when I am out with friends), I’ve been spending a lot of time in the organic sections at Whole Foods and the local store down the street Mollie Stone. They both have great selections.

This particular omelette is made with three organic eggs and equal parts cooked and raw spinach, red chard, kale, basil, cherry tomatoes, onion, green onion, shallots, serrano pepper, with a little salt and pepper. With a breakfast like this, I am ready to take on the day!
