Yesterday, I went to Whole Foods.
While I did (cos I always do) make a traditional South Indian Kerala chicken curry where I used fresh coconuts with chicken thighs, I also made a variation of a Vindaloo where I used chicken wings along with the cubed traditional chicken breast and mint leaves. Without disclosing the actual recipe, they were both beyond amazing.
I’m set for the next week!!
South Indian Kerala Chicken Curry with potatoes & coconuts
adding coconut water to the Kerala chicken (thighs) curry
Plated Mint Chicken Vindaloo
Mint Chicken Vindaloo with chicken breasts and chicken wings
