Yesterday, I went to Whole Foods.
I feel like coconuts need a separate post. I used a Philips screwdriver to pound holes into it, so I could drink the juice and use it later in the chicken curry. I used a hammer to pound the sides, so I could break the coconut in half. That was cathartic. Once open, I used a knife to pry the meat out. The meat I used for the chicken curry as well, but also for the carrots and later for the basmati rice. I saved a bunch for the freezer after I minced it in my Cuisinart for use later.
Guess what? I am set for the next week!
